Homemade Hash Browns

My son has been home from University for almost a month for Christmas break.
He returns tomorrow.
While he was here, he has been enjoying Mom's home cooking.
He is a meat and potatoes man.
While I am a "eat everything diet" woman!
So the menu has been tempting for the last month.....but I managed.

  Today I made with his breakfast, homemade hash browns.

The recipe.

You will need.
Potatoes - serve 1-2 medium per person
(I used mini potatoes - about 4 per person)
1TBSP margarine
Dash of salt and pepper
I added a dash of onion salt - this is an option.

Cook low-medium temperature.
In frying pan, melt butter.
Slices up pototoes in small sections.
Add the dash of salt and pepper.
Stir the potatoes constantly until they are slightly soft and golden brown.
  Serve with eggs, fruit, toast, milk.

I wanted to take a pic of his entire breakfast plate,
but he grabbed the plate faster that I could grab my camera!
