The other evening, after dinner I was looking through my recipes for a light dessert to make.
Something simple and not heavy on my stomach or diet!
Simple sugar cookies would do the trick. No frosting, nothing extra added, just the cookie.
1C sugar (regular or icing sugar)
1C soften butter (or margarine)
1/2 tsp vanilla extract
2 1/4C flour
Roll the dough and place on cookie sheet (can use an ice cream scooper).
Flatten with bottom of a cup or a fork.
Bake at 375 for 10-12 minutes until the edges turn a golden brown.
